Quite the reverse! Highland Silver Sap has a delicacy of taste and texture which creates a glorious synergy with your chosen spirit, unobtrusively enriching every sip.
Coming from a tree, will it have a sticky sap-like consistency?
A question often asked. Highland Silver Sap is indeed pure birch sap, however unlike other saps it isn't sticky and sweet; it's fresh, with a water-like consistency, subtle smooth layers and a delicate complexity all of its own.
Why is it so important to shake the product before you serve?
You’ll notice that BIRKENTREE Highland Silver Sap contains a small amount of sediment.These are natural enzymes and amino acids which are present in the sap, which come together when the liquid settles. The flocculation (or bunching) is our Highland Silver Sap’s signature hallmark which creates the mouthfeel that is so characteristic of our product, enhancing the spirit experience. Before serving, a vigorous shake of the bottle returns the liquid to its silver-like clarity. Highland Silver Sap is naturally active and this is precisely the way we want to keep it.
Once opened, why must Silver Sap be refrigerated and used within four days?
Similar to a natural fruit juice, Highland Silver Sap is an entirely natural liquid with no additives or preservatives. It’s filtered and bottled in its natural state, allowing us to retain the magical characteristics of this ‘living liquid’. Not going to use the whole bottle? Any remaining Silver Sap can be made into wonderfully indulgent ice cubes for another occasion.
